This 5 ingredient Mango Salsa is an easy way to add lots of flavor and color to your favorite meal!

Mango Salsa

My Mango Salsa was a bit of an accidental “recipe.”  (And this is not to say that this is an original recipe—this is just my version!)  I needed something for dinner to go with a Costco bag of avocados that Irving brought home….and all promptly ripened on the same day, because of course!  We decided on taco salad bowls with guacamole, and when I saw that giant pyramid of yellow mangoes staring back at me in the grocery store it was a no brainer.  *My* Mango Salsa was born.  And promptly inhaled by my kids.  Which brings us to the writing of this recipe….

How do you make Mango Salsa?

Mango Salsa is really easy to make.  The hardest part is peeling and dicing the slippery mangoes, and even that is not too difficult.  I start by dicing up the shallots, adding the minced garlic, and squeezing the lime juice over both so they can mellow out in flavor a bit.  Then I get to work peeling the mangoes, peeling them carefully with a paring knife, slicing them into large slices, and then dicing the slices!  Once I have small quarter inch pieces I add them to the onion, garlic, lime mixture.  I add in a bit of fresh cilantro and give it a good stir!  It’s ready to serve on your favorite tacos, or chip!

Mango Season

I love mango season!  (and then feel sad the rest of the year when mangoes aren’t at their peak freshness!). The grocery stores are piled high with mango pyramids, mango sticky rice is back on the menu at my fave vegan Thai restaurants, and I find a way to add mangoes to everything!  This mango salsa takes advantage of the season and we eat it on repeat!

Kid Favorite!

My kids love this, especially Jonny.  He’s a certified mango lover—it’s his go to flavor of choice for everything!  My kids don’t even waste time with chips when they are eating this, reaching for spoons instead for quick consumption!  It’s that yummy!

This 5 ingredient Mango Salsa is an easy way to add lots of flavor and color to your favorite meal!

Ingredients

  • 3 mangoes about 2 cups diced, (I use the small yellow "champagne" variety)
  • 2 limes juiced
  • 1 shallot diced (about 1/2 cup of shallot)
  • 2 cloves garlic minced
  • 1 small handful of cilantro chopped
  • 1/2 teaspoon salt (optional, to taste)

Instructions

  • Begin by dicing your shallot and mincing your garlic. Place in a bowl. Squeeze the lime juice over them, and give it a stir. Set aside.
  • While the shallot is marinating, prep your mangoes. Using a small paring knife, work from the stem to the bottom, peeling the skin in long pieces. Once the entire mango is peeled, slice "slabs" of mango from stem to bottom. Lay those large pieces flat on your cutting board and dice into small pieces, about 1/4" - 1/2" in size. Work carefully—ripe mangoes are very slippery.
  • Add the mangoes to the shallot mixture. Add the chopped cilantro. Give it a good stir. Serve and enjoy!
