Mix up your breakfast routine with this delicious, and ridiculously simple Avocado Toast with Coconut Bacon!

Avocado Toast with Coconut Bacon

Guys.  Meet my new obsession.  Avocado Toast with Coconut Bacon.  A few weeks ago I brought brunch to my moms’ group at church, and I wanted to mix things up a bit.  A friend had just brought toast and jam, complete with toaster, and it was a lot of fun.  Not to be a total copycat, I chose to go the savory route and do an avocado toast bar.  In addition to the toast + avocado combination, I brought hemp seeds, black sesame seeds, chipotle breakfast toppers, and coconut bacon to top them.  You guys, the coconut bacon + avocado combo was hands down the winner.  SO good.  Creamy avocado with a salty, crispy bite—at the risk of using a really overused word—it’s AWESOME!

Coconut Bacon

Last week I shared my recipe for coconut bacon.  While not a tradition bacon—I mean, it’s made out of coconut flakes!—it has all the right flavor notes.  It pairs wonderfully with the creaminess of the avocado, and makes it feel a little more like breakfast (traditionalist right here!)!

Avocado Toast

Avocado toast is the ultimate in hipster breakfasts.  I, however, am not a hipster.  At all.  And I prefer my avocado toast for a light lunch.  I struggle to get on board with a savory breakfast, sticking to chocolate tahini on toast before 8am most mornings.  But give me a savory slice of avocado toast for lunch and I am happy girl!  While David follows firmly in his mama’s footsteps, Jonny is a boy after Irving’s savory breakfast heart.  For the longest time I couldn’t get him to eat anything at breakfast, until realizing that he just wanted something savory.  He happily requests avocado toast daily now.  Apparently he is the true hipster of the family!

Serving a Crowd

Want to make an avocado toast bar for a group?  Pre mash the avocado with some lime juice, salt and pepper, and put it in an airtight jar (the less air space in the jar, the better, to keep it green!).  You can even add a clove of minced garlic if you want—yum!

Avocado Toast with Coconut Bacon

Mix up your breakfast routine with this delicious, and ridiculously simple Avocado Toast with Coconut Bacon!

Ingredients

  • 1 avocado
  • 1 slice bread
  • 1 lime
  • salt and pepper
  • 1 batch coconut bacon

Instructions

  • Toast your bread to your liking.
  • Place a few slices of avocado on the toast (I like to have enough slices to cover the whole piece of toast).
  • Using a fork, smash the avocado gently onto the toast.
  • Squeeze lime juice over top.
  • Sprinkle with salt and pepper.
  • Top with coconut bacon.
  • Enjoy!

    I’m a big fan of coconut flakes and avocado (obviously), and so this sounds like a perfect quick breakfast! I love it when really easy things are so satiating and delicious too.

    I eat avocado toast A-lot. Like at least every other day! It’s my favourite brunch or lunch. Love the texture from the crispy coconut bacon here!
