A Banana Coconut Snack Cake is the perfect recipe to keep in your back pocket when you are craving a piece of cake!  In just 45 minutes, with basic pantry staple ingredients, this yummy snack cake can be yours too!

A while back Jonny was home sick from school, and was deep into a Food Network cake baking binge!  He watched episode after episode of cake competitions…..and I was left with a very desperate hankering for cake!  I went to make my One Bowl Chocolate Chip Cake and saw a lonely banana on the counter.  I decided to mix up the flavors and see how it tasted…..and it was DELICIOUS!  And it has now become a family favorite, with all of my boys requesting in on repeat.  It is only right to share the recipe with all of you too!

What is a Snack Cake?

I recently saw packaged cakes in the bakery section of the grocery store called Snack Cakes.  Genius!  They were in little rectangular boxes, with flat frosting from edge to edge, ready for a quick bite.  No fancy layers.  No fancy decorations.  Just a perfect bite of cake for when you need a snack.  A snack cake!

One Bowl Cake!

This easy cake comes together in just one bowl.  It’s so quick to make—like less than 10 minutes from start til you get it in the oven.  And then just a 30 minute bake time.  Easy!  Plus, it uses pantry staple ingredients, perfect for days when you have a cake craving and don’t want to run to the store!

Banana Bread….or Banana Cake?

I mean, it has fruit in it, so I think it can totally pass for a banana bread (though typically banana bread has a few bananas in it, this snack cake has just one).  My kids have definitely enjoyed this for breakfast!  But with the frosting it has a little something extra, so it becomes a banana cake!

Packed with Flavor!

This easy Banana Coconut snack cake is packed with flavor!  I use coconut extract in both the cake and frosting to really bring out the coconut taste!  I also use coconut oil rather than vegetable oil for flavor and moisture!  Finally, I add shredded coconut in the cake batter, and sprinkle it on top!

Banana Coconut Snack Cake

A Banana Coconut Snack Cake is the perfect recipe to keep in your back pocket when you are craving a piece of cake!  In just 45 minutes, with basic pantry staple ingredients, this yummy snack cake can be yours too!

Ingredients

For the Cake:

  • 1 1/2 cup flour
  • 1/4 cup sugar
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup shredded coconut (I use unsweetened)
  • 3/4 cup non dairy milk (I use oat milk)
  • 1/4 cup coconut oil (melted)
  • 1 banana, smashed
  • 1 Tablespoon apple cider vinegar
  • 2 teaspoons coconut extract

For the Frosting:

  • 2 cups powdered sugar
  • 4 teaspoons non dairy milk
  • 2 Tablespoons non dairy butter (I like Earth Balance)
  • 2 teaspoons coconut extract
  • 2 Tablespoons shredded coconut

Instructions

For the Cake:

  • Preheat oven to 350 degrees Fahrenheit.
  • Whisk all the dry ingredients together in a small bowl—flour, sugar, baking powder, baking soda, salt, and coconut.
  • Combine the milk, melted coconut oil, banana, coconut extract, apple cider vinegar in a spouted measuring cup. Using a fork, smash the banana (it can still be lumpy!).
  • Add the wet to the dry and stir till combined, whisking well. Batter will be thick.
  • Pour into greased 8x8 baking dish.
  • Bake for 30 minutes or until a tester comes out clean. Allow to cool before frosting.

For the Frosting:

  • Add the powdered sugar, butter, milk, and coconut extract to a mixing bowl.
  • Using a hand held mixer, mix the ingredients until they are fully incorporated (alternately you can do this in your stand mixer).
  • Once the cake has cooled, spread the frosting on top. Sprinkle with remaining shredded coconut. Serve and enjoy!
