Broccoli Slaw with Oil Free Tahini Dressing

This is my new, very favorite, go to side dish!  Broccoli Slaw with Oil Free Tahini Dressing!  It is so, so, so very yummy!  This delicious salad is the perfect fresh bite that you crave in the winter, with hardly any work!  I’ve been making it as a quick side to go with my Instant Pot BBQ Meatballs, my Pumpkin Curry Soup, and even serving it on it’s own with all the fixings!  It’s so versatile.  The best part?  The boys love it!  For some reason they think it’s super cool that the salad is made of the stalks of broccoli.  Whatever. WORKS!

Broccoli Slaw

Broccoli Slaw is simply shredded broccoli stalks.  You can totally make your own, but it’s not a passion of mine!  I just grab a bag of the premixed slaw at Whole Foods or Trader Joe’s, or whatever store I’m at.  Most grocery stores have a mix.  You can also use this dressing on a traditional cabbage slaw and that’s delicious too!  And last week I poured the dressing over some kale, and made a salad with kale, diced apple, dried cranberry, and pepitas.  Plenty of options—be your own chef!

Tahini Dressing

Tahini is one of my pantry staples.  I ALWAYS have tahini on hand.  {Get my favorite TAHINI here! (affiliate link)}  Ever since Jonny was diagnosed with his nut allergies tahini has been our go to.  Tahini is just ground sesame seeds, made very much the same way as a nut butter.  It makes a perfect base for a salad dressing like this one.  Because of the natural oils in the sesame seeds there is no need for any added oil.  Delicious and healthy!  I also love to use tahini in my Chocolate Crunch Granola, my Tahini Mac, and of course, my Tahini Bon Bons!
