Bunny Juice

There is a fun, and very crunchy, vegan restaurant in Seattle called Chaco Canyon.  We’ve been there a few times and always order David a “bunny juice”—juice made from carrots, oranges, and apples.  Then recently we travelled to Dallas and went to a fun hipster vegan diner (and not crunchy)—Spiral Diner—where they also had juices on the menu—this time you could make your own mix.  I again ordered David a “Bunny Juice” of carrot, orange, and apple.

Fun for Kids!

Fast forward to this weekend and David asked me for Bunny Juice.  I peeked in my fridge and found some very ripe nectarines and threw one into our blender with a carrot and an apple.  This is more of a Bunny Smoothie, but for all intents and purposes we just call this Bunny Juice in our house.  Plus there’s the added benefit of keeping all of the whole food goodness!  I’ve been working on teaching David about the color association with fruits and veggies and our health—Bunny Juice makes your eyes strong!

Note: this juice will leave you with a very cute bunny mustache too.

Bunny Juice

Sweet, simple, and packed full of nutrients, this easy Bunny Juice is sure to be a hit with the little ones in your life!

Ingredients

  • 1 large carrot scrubbed and chopped into a few smaller chunks
  • 1 apple core removed
  • 1 nectarine pit removed (an orange, peel removed, would be great too)
  • 1-2 Tablespoons maple syrup I like 2
  • ¾ cup of ice then filled with water to reach 1 cup total

Instructions

  • Put all ingredients into a blender and blend until smooth.  You may need to use the tamper to press all of the fruit down to the blades.
  • Note, if you do not have a high powered blender like a Vitamix, try shredding your carrot first to help it break down a little bit.
