Campfire Cones — Three Ways!

Last weekend we went camping for the first time in a few years!  As much as I love being outside, the adventure of camping, packing the right gear and clothing for a million little micro climates, my favorite part of camping is hands down the cooking!  Many years ago, when Irving and I first went camping together, I informed him that I was a Girl Scout and I would be doing all of the cooking on the fire.  He protested that he had a camp stove, and that it was easier and more efficient, but I held firm.  I was going to cook everything on the fire.  So we sat.  And waited.  And waited.  And hours later we had boxed mac and cheese prepared on the fire.  Ok, ok, maybe the stove is a little bit more efficient.  But not nearly as fun!  Last weekend we made “hobo pouches” — veggies in foil pockets, cooked on the fire, grilled hot dogs, and Campfire Cones.

Campfire Cones

Campfire Cones are probably the more efficient version of a s’more.  Don’t get me wrong, I love s’mores, but they can be tough to put together, you get these big awkward bites of cold chocolate and melted marshmallow, and they’re kind of a mess.  Instead, with a Campfire Cone, you fill an ice cream cone with chocolate and marshmallows, wrap it in foil, and let it cook in/near the fire for a few minutes until it’s all melted inside.  Unwrap it and eat it up—so yummy!

So many Flavor Combinations!

I’ve played around with a couple of different flavors because I love these Campfire Cones so much!  I did a classic version with chocolate chips and marshmallows, and bonus butterscotch chips!  I also created a “Berries & Cream” flavor.  This one is hands down my favorite—strawberries, marshmallows, and white chocolate chips.  And another yummy combination is peanut butter and banana, with more marshmallows of course!  I kept this one allergy safe by using a peanut free peanut butter.  You could also use sunbutter!

No camping plans in the near future?  Fear not—you can make these in your oven at home, or even on the grill!  Set up an assembly line of filling choices and let your kiddos make their own.  Be creative with your fillings too—mix and match, and let me know what you come up with!

Campfire Cones — Three Ways!

Campfire Cones are sure to be the hit of your camping trip!  Ooey, gooey, and fun to eat!

Ingredients

  • ice cream cones (sugar cones work best)

For the Classic Flavor:

  • chocolate chips
  • marshmallows
  • butterscotch chips

For the Berries & Cream:

  • strawberries diced
  • marshmallows
  • white chocolate chips

For the PB & Banana:

  • peanut butter or other nut or seed butter
  • banana diced
  • marshmallows

Instructions

  • Fill 1 cone with a variety of toppings. I like to start with marshmallows in the bottom, and also have some on the top, with other fillings in between.
  • While holding the cone upright, wrap with a piece of foil, being sure to cover the whole cone to prevent burning.
  • Repeat with enough cones for everyone!
  • Place the cones on the outside of the fire. You don't want to put them right in the direct flames or they will burn.
  • Allow the cones to sit for about 5 minutes and then carefully unpeel the foil on one to check and see if they are done. If they are, pull them out of the fire. If not, give them a few more minutes and check again.
  • Enjoy! Careful: the contents you're about to eat may be hot....and delicious!

Notes

Oven Preparation: To make these at home, simply preheat your oven to 350°. Place foil wrapped cones in the oven and bake for 20 minutes. Remove from oven and carefully unwrap. Enjoy!
