Helloooooo! Testing, testing….is this thing still on? It has been a long, busy, and wonderful summer, and I inadvertently took 3 months off from blogging. I didn’t set out to take that long of a break….just a week or so. Ok, maybe one more. David got braces. I prepared snack for 450 kids for 5 days at our church camp. We hiked, we biked, we swam. We went to Whistler. And the next thing you know, my first baby hopped on the bus and rode off to the second grade. At another new school, no less. And next week my little baby heads to pre-K. Whew. And so here we are, 3 months after my last post. Since it’s been such a long time since I’ve shared a recipe, I made sure to have a really good one!!! Today’s recipe is for Cauliflower Curry Grill Packets, and it comes from my friend Jackie’s new cookbook Vegan Yack Attack On the Go! It’s actually perfect for this time of year, with kiddos heading back to school, and 2/3 of the day’s meals being made before 8am. On-the-go food is where it’s at!
Vegan Yack Attack On The Go
Jackie’s latest book is themed around meals that can be made to go! Hand held, make ahead, easily portable, quick to make—you name it, these recipes are perfect for someone with a busy lifestyle (ahem, calling all moms currently in back-to-school mode!). The book features gorgeous photographs, as well as a fun punchy graphic layout. And the recipes are all delicious! I was fortunate to be able to participate in the recipe testing for Jackie’s first book, Vegan Bowl Attack, and I can assure you, her recipes are the real deal! Check out her recipe for Kim Chi Bowls with Red Curry Almond Sauce that I shared two years ago—it continues to be on regular rotation in our house!
Cauliflower Curry Grill Packets
These delicious Cauliflower Curry Grill Packets are so easy to put together! Chop your veggies, toss them with curry powder and coconut oil, and pop the whole bowl in the fridge to marinate for the day. When you’re ready to serve, simply scoop the veggie mixture out onto squares of foil, fold it up, and pop them on the grill. While the veggies cook, whisk up a quick yogurt sauce. 15 minutes later and you’ve got an amazing dinner. I love to serve these with pita bread, or my Instant Pot Basmati Rice (because who doesn’t love using their Instant Pot—especially during warm weather!!!)
Allergy Friendly
This recipe is nut free, soy free, gluten free, vegan—it checks just about all of the boxes! In fact, earlier this summer we had a visit from family friends, and the mom and son are strictly gluten free. She pushed back on my offer to make them dinner, saying that they were hard to cook for. Challenge accepted! Queen of food allergy cooking right here! We had an amazingly fun evening, and having easy and safe food was the icing on the {allergen free} cake!

Let’s do it! I hope you enjoy Jackie’s recipe for Cauliflower Curry Grill Packets as much as we do! We’ve been making them regularly all summer long. Delicious, filling, healthy—they’re the real deal!
CAULIFLOWER CURRY GRILL PACKETS WITH YOGURT SAUCE
Ingredients
FOR THE YOGURT SAUCE:
- 1 cup plain nondairy yogurt
- 2 tablespoons chopped cilantro
- 2 tablespoons thinly sliced scallions
- 1 tablespoon lime juice
- ½ teaspoon onion powder
- ½ teaspoon lime zest
- ¼ teaspoon salt
FOR THE CURRY CAULIFLOWER:
- 1 pound cauliflower florets, chopped into bite-sized pieces
- 1 pound russet potatoes, diced
- 1 cup chopped white onion
- 1 cup halved cherry tomatoes
- 1 cup green peas
- 1 can chickpeas, drained and rinsed (15 ounces)
- 1½ tablespoons melted coconut oil
- 1½ tablespoons curry powder
- Pinch of salt
- Dash of pepper
- 1 tablespoon lemon juice
Instructions
TO MAKE THE YOGURT SAUCE:
- Place all the yogurt sauce ingredients in a small mixing bowl, and stir until combined. Refrigerate until ready to serve.
TO MAKE THE CURRY CAULIFLOWER:
- Preheat the grill to roughly 400ºF (204ºC). In a very large mixing bowl, place the cauliflower, potatoes, white onions, tomatoes, peas, and chickpeas. Drizzle coconut oil over the top of the veggies, and stir until coated. Add the curry powder and a pinch of salt and pepper, and stir again until evenly coated.
- Tear out 4 pieces of aluminum foil that are 12 x 18 inches (30 x 46 cm), and lay them out. Divide the curry cauliflower mixture between the 4 sheets, place it in the middle. Fold the two long sides in toward the middle, and fold the seam together until it hits the filling. Fold the two short sides in, twice, to seal the ends.
- Place each packet on the grill and cook for 7 minutes, flip them over and grill for an additional 7 minutes. Carefully, open one packet slightly, and poke the cauliflower and potatoes to see if they are tender. If not, cook until they are. Once cooked through, place the packets on a cooling rack for 5 minutes before opening and serving. When the packets are opened, squeeze lemon juice over each one, and top with salt and pepper. Serve packets alongside yogurt sauce and enjoy.
