Jonny’s broke his arm about a month ago, and life has been in a bit of turmoil ever since. Honestly, all of 2020 thus far has seemed a little bit messy and stressful. There have been 5 days, yes F I V E, where both of my children have attended an entire day of school since December. Each day I’ve picked Jonny up for his 1 hour lunch/recess block to give him a break from school, rather than having him sit in the office while his friends play outside (how sad would that be?). And while I am over the moon happy to be able to do that for him, it has really, ahem, cramped my style. I know, I’m being dramatic. But somehow that little break in the day makes me feel like I have no time at all to get the rest of my life taken care of. So I’ve been turning to some of my favorite easy weeknight meals over the past few weeks. Like this chickpea stir fry with pineapples. So simple and yummy!
Chickpea Stir Fry with Pineapples
This Chickpea Stir Fry with Pineapples is the ultimate pantry dinner. 2 cans of chickpeas, a bag of frozen pineapple (or a can!), and a jar of sauce. Any sauce you like. Teriyaki, sweet chili, sesame ginger, Asian BBQ. You pick. Any sauce you like. Preferably one that you’ve purchased at a store and didn’t have to make. Though if you want to make your own you can do that too! And rice. Microwave rice. Or rice made fast in the Instant Pot. Again, you pick. Toss the chickpeas and pineapple in a skillet with the sauce and heat. Dinner is done.
Other Easy Mix Ins
I love making this with chickpeas, as I almost always have a flat of cans from Costco in my pantry. It’s a nice break from tofu (which I love, but I understand is not for everyone). Other items you could mix in that would be delicious:
- green onions
- slivered almonds or peanuts
- frozen peas
- diced bell peppers
- a bag of shredded cabbage
- mushrooms
- edamame
- canned mandarin oranges
- diced onion

Chickpea Stir Fry with Pineapples
Ingredients
For the Stir Fry
- 2 15 ounce cans chickpeas, drained
- 1 pound frozen pineapple chunks (alternately, use a can of pineapple chunks)
- 1 10 ounce bottle stir fry sauce (I like teriyaki, sweet and sour, Asian BBQ, sweet chili)
Optional Mix Ins
- rice
- frozen peas
- sliced green onions
- chopped almonds or peanuts
- mushrooms
- bell peppers
- diced onions
Instructions
- Placed the drained chickpeas in a dry skillet over medium heat.
- Add the frozen (or canned) pineapple)
- Pour about half of the bottle of sauce overtop of the chickpeas and pineapple, and begin to mix well.
- Bring the sauce up to a bit of a bubble, adding more sauce as needed to coat.
- Let simmer for about 5 minutes, tossing with a spoon as needed.
- Remove from heat.
- Garnish with green onions and almonds. Serve over rice.
