Chocolate Peppermint Vegan Rice Crispy Treats might be the easiest festive treat you make this holiday season!

Christmas is 2 days away!  TWO!  How is that even possible?  The elves have been busy in my house and we actually have most of our presents wrapped ahead of time (we usually wait until Christmas Eve and have a wrapping marathon while watching A Very Harold and Kumar Christmas and throwing back a “couple” of Eggnog Martinis).  Last week we made a pan of these Chocolate Peppermint Vegan Rice Crispy Treats and they practically disappeared!  I brought some of them to a party (with my Cranberry Salsa), and the other half was promptly inhaled by the boys and I.  They are so good, and take approximately 5 minutes to make.  Yes.  5 minutes.  Ok, maybe 8.  But they’re fast!

I used the Dandies peppermint marshmallows for these (no, not sponsored, I just really love Dandies!).  Trader Joe’s also has vegan peppermint marshmallows this year!  If you can’t find either of these, using vanilla marshmallows with a little extra peppermint extract will be just fine.  But I bet you can find some peppermint Dandies at your local health food store, likely on sale right now!

Chocolate Peppermint Vegan Rice Crispy Treats

Chocolate Peppermint Vegan Rice Crispy Treats might be the easiest festive treat you make this holiday season!

Ingredients

  • 3 Tablespoons vegan butter (I use Earth Balance, can also sub coconut oil)
  • 1 10 ounce bag peppermint marshmallows (can also sub vanilla marshmallows)
  • 5 cups chocolate crispy rice cereal
  • 1/2 teaspoon peppermint extract (if using vanilla marshmallows increase to 1 teaspoon)
  • a few tablespoons of crushed candy canes (pulse in food processor until crushed and crumbly)

Instructions

  • Melt butter in a large pot.
  • Add marshmallows and stir over medium low heat until melted (will take a few minutes).
  • Add peppermint extract and stir well.
  • Add cereal and stir to coat (will be tough to get completely coated, but will eventually come together!).
  • Spray large 9x13" pan with non stick baking spray.
  • Press cereal mixture into pan. Wet hands and then press cereal to prevent sticking.
  • Sprinkle candy canes on top and press again to help stick.
  • Allow to cool and come to room temperature before cutting into squares.
  • Serve and enjoy!

    Oh my gosh, these look so good! I made cocoa crispy treats last week, and they would have been SO good with a minty edge!

      Yes! So good. I kind of liked them as they got a bit stale too—they had this perfect chew to them! Yum!

    I have a bunch of vanilla dandies in my freezer right now AND a box of cocoa crispies! i’ll definitely be making some of these.

    my MIL sometimes stirs chocolate chips into her (regular non-vegan) rice krispie treats. i bet that would be asuper yum addition to this too!
