Copycat Vegan Unicorn Frappe

Treat yourself to a healthy vegan Unicorn Frappe without a trip to your local coffee shop!

Short of living under a rock for the past week, I’m sure you’ve heard of Starbucks “limited time only” Unicorn Frappucino drink.  It completely took over my facebook feed for all of last weekend!  This fancy drink boasts a sweet and sour mango flavor that supposedly changes as you mix the neon blue and fluorescent pink layers together!  It also boasts a whopping 76 grams of sugar, and a whole lot of food coloring.

So, like hundreds of other bloggers, I decided to make my own copycat version.  I know, I know, I’m not even close to the first to do it this week.  But it was such a fun project, and the boys thought it was really cool!  I mean c’mon—sprinkles (check out these pretty vegan sprinkles!)!  My Vegan Unicorn Frappe has the same fun sweet and sour flavor, but it’s created with strawberries, raspberries, mangoes, and lemons.  You know, ingredients you can pronounce.  Topped with some vegan whip and some fun sprinkles and it rivals any unicorn drink you can imagine….plus you can eat it for breakfast with your conscience intact!

This vegan Unicorn Frappe is pretty simple to make.  The trickiest thing is keeping your layers separate.  If they get too thin you can pop them in the freezer for a bit before layering.  Or you can just not worry about it and know that it will taste delicious anyway!

Copycat Vegan Unicorn Frappe

Treat yourself to a healthy vegan Unicorn Frappe without a trip to your local coffee shop!

Ingredients

Mango Layer:

  • 1/2 cup frozen mango
  • juice of 1 lemon
  • 1 teaspoon agave
  • 1/4 teaspoon turmeric
  • 1 frozen banana
  • splash of dairy free milk

Berry Layer:

  • 1/2 cup frozen raspberries
  • 1/2 cup frozen strawberries
  • 1/4 -1/2 cup grape juice or other red juice

Toppings:

  • mango drizzle see step 1
  • dairy free whipped cream I like Soya Too brand
  • vegan sprinkles

Instructions

For the Mango Drizzle:

  • Place frozen mango, lemon juice, agave, and turmeric in the blender. Blend until smooth. Set aside about 1 tablespoon of the mango mixture.

For the Mango Layer:

  • Place frozen banana into the blender with the remaining mango mixture.
  • Blend, adding a splash of milk as needed.
  • Set in freezer to chill while you work on the second layer.

For the Berry Layer:

  • Place the raspberries, strawberries, and juice in the blender.
  • Blend until smooth.

For the Unicorn Frappe:

  • Layer the flavors in a glass, alternating them to make a pattern.
  • Top with mango drizzle, whipped cream and sprinkles.
  • Enjoy!
