Yesterday we hosted David’s second birthday party [gulp]—it was a hit! He had a great time with his friends and talked about it all afternoon! It will shock you to hear that I am wondering how in the world my baby is now 2 (ok, 7 more days until it’s official, but close enough!)! When did this happen? I must say that although I miss snuggling with my sleeping baby, I am finding new things to love about this age (and a few that I’m not so fond of). David’s vocabulary grows daily and he loves to tell me stories about what he’s done that day, whether it’s going to church and playing with his friends, or out to lunch on a Mommy-David date. He recounts every last detail. He also loves to pretend and I have so much fun listening to the stories he creates. Lately we’ve been hearing a lot of stories that involve taking his stuffed animals on the train to his favorite sushi restaurant. He already has a great sense of humor and loves to make Irving and me laugh! I love watching him grow, not just in terms of his physical size, but also seeing his brain developing as he turns into a little boy.
So what did we do at his party? Well, according to David we “ate lunch!” And that’s pretty accurate. David’s favorite thing to do right now is to play with his Lego collection, so we themed the whole party around Legos. We had rice and bean empanadas (made simpler by using premade puff pastry!)…

…a big green salad with red cabbage, corn, pepitas, orange bell pepper, scallions, cucumbers and my Cilantro Lime dressing…
…“Lego Brick” salad (all fruits—mangoes, pineapple, watermelon, and kiwi—were cut into square shapes)…
…and a giant yellow Lego shaped cake. The cake was delicious—made following the “Ultra Orange” recipe in Joy of Cooking.
I had fun making party bags into giant Lego blocks. I just punched out six 2 inch circles for each bag and mounted them on the bags with little pieces of double sided foam squares to give them a little lift.
Each bag contained a small Lego set and a set of Lego Man crayons that I made following a tutorial—and no candy!
My mom put together a centerpiece filled with Irving’s “grown up” Legos and some balloons.
Grandma also made peanut butter and jelly sandwiches for the kids—mostly so that we could save the empanadas for the adults 🙂
And I painted a Lego man shirt for David to wear following another online tutorial.
We had lots of fun with great friends, and we’re so glad to have so many special people in David’s life. Most of all, we’re grateful for our healthy, (mostly) sweet 2 year old!
