Dinner at the Farmer’s Market

Look at all of those veggies bursting with flavor!

Last night I took the night off from cooking, and instead we headed over to the Bellevue Farmer’s Market.  We needed zucchini and blueberries (David calls them “blue blues”), and I knew there were several prepared food stands at the market, so we thought we would make a night of it.  There were so many great vegan options: vegan chili, gazpacho, and wild mushroom soup, but for our dinner we chose tamales from Hermosa Mexican Foods.  Irving enjoyed the chicken tamales while David and I feasted on the vegan tamales.  Rather than a traditional tamale with a filled center, the vegan tamale is corn masa mixed with black beans, read peppers, corn and cilantro throughout, smothered with a tomatillo verde salsa!  Every bite is delicious…Irving tasted ours and said that ours was more flavorful than his (I have to admit that I always feel a little bit smug when this happens 😉 )!  We enjoyed a fun night with live music, a beautiful sunset, and we came home to a clean kitchen without any dishes to wash!  Hope you have as much success as we did for your next night out!
