Awesome Vegan Soups

I am so excited to share a new cookbook with you today!  Awesome Vegan Soups is just as the title would lead you to believe—full of delicious, warming, AWESOME vegan soup recipes!  Authored by Vanessa Croessman of the gorgeous blog Vegan Family Recipes, it has soups for each of the 4 seasons, utilizing flavors and ingredients for each time of year.  Think Roasted Apple Butternut Squash soup for Fall, Indian Lentil Soup with Kale and Cilantro for Winter, Creamy Leek Soup with Wild Rice for Spring, and Edamame Miso Soup for Summer.  The instructions are simple and straightforward, the photos are beautiful, and the flavors are so creative!

Edamame Miso Soup

We’ve been on a real soup kick lately!  Over the Christmas Holiday I handed Irving my copy of Awesome Vegan Soups and asked him to pick a yummy looking recipe for me to make.  He handed it back with about half of the pages marked!  But the one he most wanted to try was the Edamame Miso Soup.  I was eager to try it as well, as we had recently dined at a delicious sushi restaurant and the miso soup they served was not vegan.  Miso soup at home it is!

Packed with flavor!

The broth of this soup is incredibly flavorful!  Beyond the miso paste, which is an obvious ingredient, the broth also has fresh ginger.  This ginger makes all the difference in this soup—so much flavor!  You also soak some seaweed to give the soup a briny ocean flavor.  Then the soup is loaded up with lots of bright greens—green onions, spinach, and edamame!

This soup is labeled as a summer soup, but it made for a delicious dinner in winter as well!  We served it with sushi rice and it was a perfect light dinner after the holidays!  The edamame give it lots of protein, and the spinach gives it some heft as well.

Edamame Miso Soup from Awesome Vegan Soups

Who doesn't love edamame? Get a whole lot of it in this easy miso soup. Spinach is added for an extra vitamin boost, and don't skip the chopped scallions!

Ingredients

  • 1 Tablespoon (5 g) wakame seaweed
  • 1 Tablespoons (40 g) vegan miso paste
  • 2 1/4 cups (540 mL) water, divided
  • 1 cup (100 g) shelled edamame
  • 1/8 cup (10 g) chopped, fresh ginger
  • 1/2 cup (15 g) baby spinach
  • 1 scallion chopped, for garnish

Instructions

  • Soak the wakame seaweed for 5 minutes in a bit of water to rehydrate it. Drain the water from the seaweed and set it aside. Dissolve the miso paste in 1/4 cup (60 mL) of water.
  • Bring 2 cups (473 mL) of water to a boil in a stockpot, and add the edamame and ginger. Cook for 4 minutes until the edamame is cooked. Stir the baby spinach into the pot and remove it from the stove. Add the soaked wakame and miso water.
  • Divide the soup into bowls, garnish with chopped scallion and serve immediately.

Notes

Make sure the miso paste you are buying does not contain bonito, as this contains fish and will not be vegan friendly.
