Homemade Graham Crackers
I’ve been looking for a healthy “cookie” recipe for some time now. I try to avoid processed foods when I can, especially for David. A lot of them have ingredients we try to avoid—even most commercial graham crackers contain honey, which, although it’s not my hill to die on, is something I avoid. It seems silly to pay more for foods that are less healthy than I can make at home, so when my friend Laura gave me this recipe I jumped on it! These turned out great—not quite like a traditional store bought graham cracker, but that same type of slightly, but not too sweet cookie.

David (and Mommy, and Daddy, and Grandma, and Aunt Hannah!) loved them, and I felt so good about giving him yummy cookies that were healthy too! The best part is that they came together so quickly. Even the rolling and cutting went quickly, and it would be a really fun activity to do with your kids! Bonus—you can pick and choose what shapes you want to make for different times of year! Last month when David was in charge of snack for his class I made each student a big snowflake cookie—fun!

Graham Crackers
Ingredients
- 1 cup white flour
- 3/4 cup whole wheat flour
- 1/2 cup wheat germ (you can find this in the refrigerator of the healthy foods department of your grocery store)
- 1/3 cup packed brown sugar
- 1 1/2 teaspoon cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- combination of 6 Tablespoons Earth Balance butter and 4 Tablespoons Earth Balance shortening—OR—10 T Earth Balance butter
- 2 Tablespoons maple syrup
- 2 Tablespoons ice water
- sugar to sprinkle optional
Instructions
- In a food processor, combine flours, wheat germ, sugar, cinnamon, baking powder, baking soda and salt. Pulse the mixture until all ingredients are combined. Add in the butter, shortening, and maple syrup and pulse until it resembles a coarse meal. Add the water and pulse until the dough barely comes together. Shape dough into a flat disk and wrap with plastic wrap. Put in the fridge for 10-15 minutes.
- Preheat oven to 350. Line baking sheet with parchment paper and set aside.
- Place the dough on a lightly floured surface and roll out to 1/8 inch thick. Using cookie cutters you can cut out shapes and place about an inch apart on the baking sheet (they don't spread much). Bake for 15 minutes or until the edges are lightly brown. To make them more of a treat, you can sprinkle a bit of sugar or sprinkles on top before baking.
What pretty star shapes! I have never tried a graham cracker but I am told they are very like English Digestive biscuits which I love!
