Happy Birthday Dr. Seuss!

We read a lot of Dr. Seuss in our house. We also eat a lot of chia seeds. So when I saw this fun recipe from Kathy Patalsky, one of my favorite vegan bloggers, I knew I had to make it on Dr. Seuss’ birthday. Dr. Seuss Fruity Swirl Pudding—based on the swirly cover of Oh, the Places You’ll Go!—was delicious—swirls of coconutty orange and blueberry, spotted with squishy chia seeds—I think it was meant for a dessert but we ate it for breakfast.  As you can see by my ridiculous number of pictures, the biggest Dr. Seuss fan in our house loved it (as did his parents). He couldn’t even wait for me to finish taking pictures—or to grab a spoon for that matter—to start eating!
