Monster Mash

We’re halfway through Vegan MoFo today!  This month is flying by and I have so many more ideas and recipes to share with all of you.  This might have to be Vegan MoFo and a half!  I’ve had fun discussing Raising Healthy Eaters with you this month.  You can keep tabs on any posts you missed by following the links below or going to my Vegan MoFo page.

So far we’ve made Bunny Juice, Banana Peach Ice Cream, Ravioli, Peanut Butte Dip, Chocolate Chip Pancakes, and Gracie Bars.  We’ve also talked about getting kids excited about where their food comes from by doing small gardening projects, I’ve shown you David’s top 10 favorite pasta dishes, the not-so-cool Clean Plate Club, and I’ve given away a Vegan Cuts box!  Whew—it’s been a busy month, and there’s so much more to come.

Today I’m going to share a really fast and yummy recipe that we call Monster Mash!  It’s a perfect side dish for a family on the go—David loves this, and so do Irving and I.  It takes about 5 minutes to put together, and uses frozen peas—a staple in most American families’ freezers!  Healthy fats from the avocado make this a nutritional win!

Did you know peas are a really good source of protein?  They clock in at 6g per serving.  Next time you read the labels on your protein bars, powders, or veggie nuggets I’m sure you’ll notice pea protein on the list!

Monster Mash, serves 4
½ avocado
¼ t garlic powder
½ t onion powder
salt and pepper
2 c frozen peas

Bring a small pot of water to a boil and boil the peas for 2 minutes.  Alternately, follow the package instructions and prepare them in the microwave.

While the peas are heating, smash half of the avocado in a small bowl with a fork.  Add the garlic and onion powders, and salt and pepper to taste and mix well.  Add the heated peas and mix well.  Serve!
