SPARKLE!

Big news over here this week—we are moving!  Tomorrow!  (or maybe by the time I finish writing this we will be moving today!).  We’re only moving 3 miles away, so it seems like it should be so “easy.”  But it’s not.  At all.  Irving and I have pulled “most nighters” all week, schlepping boxes, sorting clothes, and cleaning, cleaning, cleaning.  Seriously thankful that it’s not 90 degrees this week because even in the upper 70’s I’m feeling a bit wilted.  Sweaty, tired, dirty.  Moving isn’t glamorous (though I’m thankful that we get to move—more on that later!)  So in the midst of all of this dirt and grime I find myself wanting something a little pretty.  You know….with SPARKLE!  Enter…. Peaches and Cream Nice Cream Floats.

Nice Cream

Yep, NICE cream.  Not mean cream.  Not grouchy cream.  Who would want that?  No one, that’s who!  This is nice cream, made out of just 2 ingredients—peaches, and…wait for it….coconut cream!  Super simple.  Super easy.  Super delicious.

Top off a few scoops of peaches and cream nice cream with some delicious Sparkling Ice and you’ve got yourself a true winner of a drink.  One that will make you feel pretty.  Less hot, more vibrant.  Less tired, more colorful.  You might even say that it will make you…sparkle!

Sparkling Ice makes sweet, fruity, sparkling waters with 0 calories.  Yep, ZERO!  They come in 15 different delicious flavors, and you can have them delivered to your door with a click of a button, er, link (Hi Amazon!).  A major plus for busy moms like me.  In the middle of a move.  With no time to run to a grocery store.  Don’t you just love online shopping?  Is there anything Amazon can’t provide?  My fave!

I chose Peaches and Cream Nice Cream to pair with the Peach Nectarine Sparkling Ice flavor.  It’s SO delicious!  BUT….I can’t wait to mix it up and try other flavor combos too!  Like mango nice cream with Orange Mango Sparkling Ice, cherry nice cream with the Cherry Limeade Sparkling Ice, strawberry nice cream with Kiwi Strawberry Sparkling Ice.  So many options, so little time.

Peaches and Cream Nice Cream Float

Get your sparkle on with this Peaches and Cream Nice Cream Float! Quick, easy, and delicious!

Ingredients

  • 1/2 cup canned coconut milk I like Thai Kitchen
  • 1/2 cup frozen peach slices
  • 1 bottle Sparkling Ice Peach Nectarine flavor

Instructions

  • Freeze the coconut milk in an ice cube tray for 8 hours, or until frozen solid.
  • Place frozen coconut milk and frozen peaches into your food processor.
  • Pulse until they become a crumbly mix. Add a splash of water (1 tablespoon at a time) and continue to pulse until the mixture becomes creamy and smooth.
  • Divide into two tall glasses.
  • Top with Sparkling Ice Peach Nectarine flavor.
  • Go get your sparkle on!
