It’s the most wonderful time of the year….and we are hustle bustling over here!  Company parties, school art projects, martial arts promotions, teacher appreciation cookies…..things are busy!  So of course I have turned to my BFF coffee to power me through!  But not just any coffee.  Coffee (iced, because always), with DIY dairy free Peppermint Mocha Creamer!  Every keg mug of it tastes like Christmas!  Just a few simple ingredients will add a bit of sparkle to every joyous sip!

Dairy Free Peppermint Mocha Creamer

This dairy free Peppermint Mocha Creamer is so simple to make.  No need to buy pricey seasonal flavored lattes at the drive through when you can make it in your own kitchen!  I start with a base of dairy free creamer—I like soy and oat the best.  I tried using non dairy milk for this, but it just wasn’t the right consistency for me.  But if it is what you have on hand, then by all means!  Then I add chocolate syrup—did you know that many chocolate syrups are vegan?  Whole Foods 365, Santa Cruz, Holy Kakow, and even Hershey’s!  Then a bit of peppermint and vanilla extracts (to balance each other out) and a quick stir!  That’s what?  1, 2, 3, 4 ingredients?  Boom—simple!  Because we all need a win this time of year!  I make a big jar each time—about 2 cups of creamer.  It’s enough to last me for the week!

Easy Peppermint Hot Chocolate

Normally at this time of year I make hot chocolate for the boys using soynog! (Check out my Christmas Hot Chocolate recipe!).  But last week I made them some using this peppermint mocha creamer for a base.  Really good.  I just filled their glass (we have some mini Christmas mugs) about half way with creamer, and then topped it off with some extra soy milk, and warmed it all up.  Yum!

Seasonal Coffee Drinks

The funny thing is that I’ve been drinking this seasonal latte drink since before it was in season!  As a blogger, I usually start making seasonal foods the season before!  So in August I was testing and sipping on my Vegan Pumpkin Spice Latte.  And then at the beginning of November I started testing this Peppermint Mocha Creamer.  Apparently now I should really start testing more green smoothies for Veganuary…..but I think I’ll stay right here in Christmas land for a little bit longer—it’s so cozy here!

Peppermint Mocha Creamer

This Peppermint Mocha Creamer will help wake you up and keep you going during the busiest season of the year! No need to wait in long lines for a sweet treat when you can make one in the comfort of your own kitchen!
Prep Time5 mins
Total Time5 mins
Course: Beverage
Cuisine: Christmas
Keyword: Christmas, coffee
Servings: 6 servings
Author: Sarah

Ingredients

  • 1/3 cup dairy free chocolate syrup (or more to taste, see notes)
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • 1 2/3 cup dairy free creamer (I like soy and oat best)

Instructions

  • Pour chocolate syrup into a 2 cup measuring cup or large jar.
  • Add vanilla and peppermint extracts and mix well.
  • Pour creamer over top and mix well until fully incorporated.
  • Store in a sealed container in the refrigerator.
  • Enjoy!

Notes

Chocolate Notes:
I did not like using cocoa powder in this creamer.  It was harder to mix, and it wasn't very sweet.  However, if it is what you have on hand you can use it, and add agave to sweeten.  If you choose to use cocoa powder use about 1/4 cup, and mix it into a paste with about 1/4 of creamer to start.  Then gradually whisk in the remaining ingredients until it is smooth and completely mixed.

Whipped Topping:
If you're feeling extra fancy you can top your coffee with whipped aquafaba (no real flavor, just looks pretty) or with dairy free whipped cream!

Looks delicious and I can’t wait to try it (even though it’s already January!)! The measurements don’t show up for me. How much chocolate syrup and how much creamer? Thanks.

Me too! Silk soy is my favorite!!! And this jazzed up version feels so festive and fancy, with hardly any work. Hope you love it as much as I do!
