Popeye’s Pesto Pasta

When most people think of pesto they think of a sauce made of basil and parmesan.  But pesto originally referred to the method of making the sauce…pounding, or in modern terms, food processing!  I like to sneak a few other veggies…spinach and peas in this case…into my pesto.  David started out as a pretty adventurous eater, but now that he is a full on toddler he has discovered how to share his opinions on foods, and veggies aren’t always on the top of his wish list.  However, added into yummy sauce smothering pasta and it’s a go!

Here’s my perfect blend of spinach pea basil pesto…a dish fit for Popeye!  You’ll never miss the cheese!

Popeye’s Pesto Pasta
2 oz spinach
2 oz basil
1 c peas
2 garlic cloves
juice of 1 lemon
1/3 c pine nuts
1 tsp salt
¼ c olive oil

Place all ingredients into a food processor and blend, stopping a few times to scrape down the sides.  The longer you blend, the smoother the sauce will be.  Pour over your favorite pasta and enjoy!

Other serving ideas: use this as a spread on sandwiches, pour over potatoes, drizzle onto tomato soup for a garnish…the options are endless!  How do you like to serve pesto?
