Pumpkin Spice Oatmeal

We are going on week 8 on our kitchen remodel….which also means week 8 of no kitchen!  Never have I appreciated the modern convenience of the dishwasher so much!  Without a kitchen, we’ve been using my single burner that I use for blog videos, and the Instant Pot for virtually all cooking (and I’ve got a new Instant Pot recipe coming up next week!).  This cozy bowl of Pumpkin Spice Oatmeal came together one morning when David and I wanted something a little more special for breakfast than our go to toast!  Super simple, cooks on 1 burner (ha!), and fast to make too.  It was a win!

Warm flavors of pumpkin, agave or maple syrup, and DIY pumpkin spice mix—cinnamon, ginger, clove, and nutmeg—come together to start your morning off right!  You could just use store bought pumpkin spice blend as well.  Whatever you have handy!  If you go the DIY route, be sure to use just a dash of cloves—they are easily overpowering!

Fall Flavors

Anyone else have pumpkin fever?  I feel this self imposed pressure to make as many pumpkin flavored things as I can think of during October and November, because I feel like you’re not supposed to use pumpkin after the fall.  I know it’s available year round these days, but I really make my fall months count!  Just in the past few weeks I’ve shared recipes for Mac and Cheese with Pumpkin, Pumpkin Patch Chocolate Bark, and Pumpkin Spice Syrup, and that hardly scratches the surface of my pumpkin obsession!  Oh, and a couple of good apple recipes to round off the fall flavors—Apple Cinnamon Instant Oatmeal and Homemade Applesauce!

Pumpkin Spice Oatmeal

A warm and cozy bowl of Pumpkin Spice Oatmeal is just the thing to get you going on a chilly morning!

Ingredients

  • 1 1/2 cups water
  • 1/2 cup dairy free milk
  • pinch of salt
  • 1/2 cup pumpkin puree
  • 2 Tablespoons agave maple syrup, or brown sugar
  • dash each of cinnamon ginger, nutmeg, cloves
  • 1 1/2 cups rolled oats use gluten free if necessary
  • pumpkin seeds for topping

Instructions

  • Place the water, plant milk, and pinch of salt in a small saucepan and bring to a boil.
  • Reduce heat and add the pumpkin puree, sweetener, and spices. Whisk well.
  • Add the rolled oats and stir to incorporate.
  • Simmer over low heat until most of the liquid is absorbed, and the oats are softened to preference.
  • Remove from heat and serve! Top with pumpkin seeds if desired.

    Warm breakfasts are a must this time of year! This looks really cozy and filling. I’m so excited for you to have your kitchen finished. This must feel like the longest 8 weeks ever!
