Pumpkin Spice Waffles

These semi-from-scratch Pumpkin Spice Waffles take just minutes to put together, leaving you time to do what matters most during the holidays—spend time with your family! fried dandelions // pumpkin spice waffles

My kiddos love homemade waffles.  They ask for them just about every day, and of course on school days I am always having to say no because who has time for that kind of thing in the morning?  Saturdays are usually our big waffle day!  Even then, I try to eek out every minute of sleep that I can, letting the boys watch TV while I drift in and out of my final moments of sleep.  When I finally drag myself out of bed the boys are desperate for breakfast—and a “fancy” one at that!  “Mommy, make waffles!!!”  I get started, but measuring out all of the ingredients takes time, and inevitably it is always pretty late by the time breakfast is finally served to my hungry boys.  When I found Immaculate Baking Company’s Pancake and Waffle mix I was sold!  Organic, wholesome ingredients, already measured out, and ready to mix.  Done!  (Seriously, done in 15 minutes).

I doctored these up just a bit to make them worthy of a fancy weekend brunch.  We’ve got a 4 day weekend coming up for Thanksgiving and I know my boys will be clamoring for “fancy breakfast” on some of our off days.  These would actually make a great Thanksgiving morning breakfast—something delicious but easy to hold you over until the main event!

I’m really loving the Immaculate Baking products I’ve found in my local stores.  Last week I made mummy dogs for the boys for Halloween using their crescent rolls and they were really delicious!  They’ve also got regular baking flours, cookie mixes, cinnamon rolls—you name it.  They have a fair amount of gluten free items, and many, like the waffle mix, are also organic—be sure to read the labels for specific interests!  Use their store finder to locate the products near you!  Bonus: I’ve got a $1 off coupon for you!

Pumpkin Spice Waffles

These semi-from-scratch Pumpkin Spice Waffles take just minutes to put together, leaving you time to do what matters most during the holidays—spend time with your family!

Servings: 8 Belgian Waffles

Ingredients

  • 1 2/3 cup Immaculate Baking Pancake and Waffle Mix
  • 2 t cinnamon
  • 1 cup non dairy milk
  • 1 teaspoon apple cider vinegar
  • 1/3 cup pumpkin puree (if it's not in season go ahead and give banana or applesauce a try!)
  • 3 T aquafaba (the liquid drained from a can of beans)
  • 2 Tablespoons coconut oil or other neutral oil

Instructions

  • Preheat your waffle maker.
  • Pour the waffle mix into a bowl. Add the cinnamon and stir together.
  • In a large measuring cup, measure out the non dairy milk, vinegar, pumpkin, aquafaba, and oil. Whisk together.
  • Pour the liquids into the dry ingredients and mix to incorporate completely.
  • Spoon the batter into a preheated waffle maker. I was able to make 8 belgian waffle squares.
  • Cook according to waffle maker instructions.
  • Remove from waffle maker and enjoy! I recommend serving these with my Pumpkin Spice Syrup!

    I have actually used Immaculate’s products and they are fantastic! You’d better believe I won’t miss making these waffles. Sounds eonderful.

    These sound so good! I love the crisp exterior, soft interior of waffles. Plus, all of those nooks and crannies! But I agree that it takes way too long on most mornings, especially since you can only make one at a time. There’s a lot of waiting in between each one. Your recipe sounds perfect for autumn.

    On the occasions that I make waffles, I usually make extra and then freeze them. They work surprisingly well in the toaster straight from the freezer. It makes waffles a weekday possibility.

      Yes, I do that too! There was a while where I was making quadruple batches of Cara’s Best Gluten Free Waffles and freezing them so I could toast them each morning!

      My thoughts exactly! I love homemade, but the busier my kids get, the less time I have. Having half the work done for me makes it so much easier!

      Aw, that’s awesome! I know they say to never give an appliance as a romantic gift, but some of the best presents Irving has given my have been appliances—my dehydrator, food processor, mixer, and Vitamix! And my mom gave us an ice cream maker for our anniversary once!
