Snowfall Coconut Lime Margarita

This sweet and creamy coconut lime margarita will whisk you away to a tropical island!  Perfect for sipping over the holidays when the weather at home is a bit frightful!

Snowfall Coconut Lime Margarita

This past summer we took a family trip to Puerto Rico to visit Irving’s parents.  After two weeks of non stop beach adventures we spent three quiet and relaxing days at a resort hotel in San Juan to unwind before heading home.  Having had enough adventures, I voted for dining at the hotel restaurants—they had several Impossible Meat options and I was sold!  The menu also featured a cocktail they called a Snowfall Margarita.  It felt a little out of place—it was the high heat of summer, and Puerto Rico is known for its rum, not tequila.  But loving all things coconut I gave it a try….and another….y una mas, por favor!  It was delicious and I made sure to try several just to make sure I could remake it at home!  You’re welcome!

How do you make a Coconut Lime Margarita?

This Snowfall Coconut Lime Margarita couldn’t be easier to make!  Simply combine coconut tequila, triple sec, lime juice, and coconut milk.  Give it a good shake and pour it over ice.  Instantly feel transported to the beach.

Rimmed with Coconut

While a traditional margarita is often served with a salt rim, this drink looks so festive with its coconut rim!  It reminds me a little bit of the trim on Santa’s suit, making it a perfect sip for the holidays!  Simply dip the rim of your glass in a squeeze of agave, then dip into a plate of shredded coconut.  So easy, and really pretty.  I’ve garnished mine with some cranberries as well, to make it extra festive!  Simply skewer a few cranberries and pop them in the freezer.  When they begin to thaw they look frosty and gorgeous!

Make it a Mocktail!

My kids love it when I make them mocktails.  I go all out with a fancy rim, fancy glasses, and then make this margarita without the alcohol.  They call this one a Lima-colada!

Other Margarita Variations

This drink can be customized with what you have on hand!  Don’t have coconut flavored tequila?  Silver tequila will work just fine!  Don’t want to open a can of coconut milk?  Just use some dairy free creamer.  Feeling tropical?  Swap out the lime juice for pineapple juice.  Triple sec and Cointreau can be used interchangeably in this drink too!

Snowfall Coconut Lime Margarita

Ingredients

For the rim:

  • 1 Tablespoon agave
  • 1 Tablespoon shredded coconut

For the margarita:

  • 1 1/2 ounces coconut tequila
  • 1 ounce triple sec liquor
  • 2 ounces lime juice
  • 1 ounce canned coconut milk
  • ice

For garnish:

  • whole cranberries (optional)
  • lime slices (optional)

Instructions

For the rim:

  • Pour the agave on a small plate.
  • Put the shredded coconut on a second plate.
  • Dip the rim of your glass into the agave, making sure to go all the way around the rim of the glass.
  • Dip the agave coated rim into the coconut, carefully working your way around to coat the entire rim.
  • Set aside.

For the margarita:

  • Place the tequila, triple sec, lime juice, and coconut milk in a cocktail shaker or container with lid. Add ice.
  • Shake vigorously until all ingredients are incorporated.
  • Place a few ice cubes into the prepared rimmed glass.
  • Strain the margarita mixture into the glass (leaving the ice cubes from shaking behind).
  • Garnish with cranberries or lime slice if desired.
  • Serve and enjoy!
