Sparkling Pineapple Mojito

I have an extra special recipe for you today— a Sparkling Pineapple Mojito!  This drink is refreshing, sweet, and light—perfect for summer, which I think is fiiiiinally around the corner for Seattle!  Bonus—you can make this bar quality drink in the comfort of your own home…on a Friday night….when you can’t find a babysitter and want to pretend that you’re still a young jetsetter traveling the world!

Irving was my inspiration for this recipe.  Those of you who have been reading for a while now will remember that Irving is Dominican, and also spent a good portion of his childhood and college years in Puerto Rico.  For Christmas 2006, Irving brought me home with him for a “meet the parents” visit, and grand tour of Puerto Rico.  It is seared in my mind as basically the best vacation ever.  We spent our days traveling the island, making impromptu stops on the beach, and spending our evenings in the town square, munching on pastelitos from the bakery where Irving worked when he was in college.  Some nights we went to the hotel in town where the lounge singer would croon old romance songs in Spanish (everything is more romantic in Spanish, 100%) while we sipped on mojitos and piña coladas.  I fell in love.  With the island.  With all things tropical.  With Irving.  Little did I know at the time that we’d be married less than a year later.

As much as I would love to be on a romantic vacation forever, reality calls.  Kids.  Schedules.  Laundry.  Instead I find fun ways to sneak the flavors of vacation into our own home.  And these Sparkling Pineapple Mojitos totally fit the bill.  Sweet tropical pineapple, light rum, mint—some of Irving’s favorites.

The sparkle in this delicious Sparkling Pineapple Mojito comes from Voveti Prosecco—and it is the key to making it feel extra fancy!  Voveti is crafted from 100% Prosecco (Glera grapes)—it is a dry brut DOC Prosecco with tempered acidity and a fresh, graceful profile.  It is a fruity prosecco, with flavors of pear, green apple, melon and ripe peach—and it pairs perfectly with sweet pineapple juice and mint!  You’ll definitely want a second glass!  Bonus—in addition to a traditional bottle, they have these fun travel size bottles.  I’m thinking summer camping?  Yes.

Oh yeah—and Voveti is totally vegan.  Swoon.

Look how easy it is to make a Sparkling Pineapple Mojito!

I hope this delicious Sparkling Pineapple Mojito goes on regular rotation at your house.  We’ve had a *few* this week, and Irving texted today to say that he’d bring home some more Voveti so that I can make him more.  Music to my ears….er….eyes?  I know we’ll be drinking these all summer long.  Be sure to take a picture of yours and post it to social media!  I love to see what you’re sippin’!  {#frieddandelions // @frieddandelions}

Serves 1 mojito

Sparkling Pineapple Mojito

Ingredients

  • 1-2 teaspoons agave
  • 5-6 mint leaves
  • 1 ounce light rum
  • 3 ounces pineapple juice
  • ice
  • Voveti Prosecco to fill
  • Garnish
  • slice of fresh pineapple
  • extra mint leaf sprigs

Instructions

  1. Place agave, mint leaves, and rum into a glass. Using a muddler or a wooden spoon, tamp down on the leaves to break them up a bit and release their flavor.
  2. Pour the pineapple juice over the mint rum mixture. Stir.
  3. Add ice to fill the glass.
  4. Pour Voveti Prosecco over the ice. Repeat as necessary, as bubbles go down, to fill the glass.
  5. Enjoy and repeat!
