Childhood Memories
My Mom’s Sugar and Spice Cookies are some of my very favorite cookies in the world. My mom used to make them for us every Valentine’s Day, and most Christmases too. When I was in college she would mail me a box of them, and I always loved that they arrived a few days stale because the frosting would soften the cookie so that it would melt in your mouth! Irving prefers them without frosting, but the boys and I are #teamfrosting all the way! Don’t save these just for the holidays though, they are perfect for any time of year!
Yesterday I made 8 dozen of them (double batch!)! My moms’ fellowship group at church was getting together to decorate cookies to give to the Congregation for the Homeless ministry, who is using our church as a shelter for the month of December. These cookies will be stuffed into the men’s bag lunches that they take each morning when they head out. I think we collectively made and decorated 250 cookies today! They looked great, and were so yummy too (yes, we may have done a little quality control testing!). I saved a few more to frost with David tonight—not sure that decorating cookies with a not quite 2 year old was a great idea (as evidenced by my pictures—see below for my original pics!), but we certainly had fun!
I love making these Spice Cookies—they instantly transport me to my childhood! My #1 pro tip for fancy looking cookies is to pick one shape, or maybe 2, and stick with them, rather than using lots of cookie cutters. And my advice for having fun is just the opposite—use every crazy cookie cutter you have in the box, and have lots of fun decorating with tons of sprinkles! Your choice!

Sugar and Spice Cookies
Ingredients
Sugar and Spice Cookies
- 1 cup sugar
- ¾ cup softened Earth Balance shortening sticks
- 1 ½ teaspoons Ener-G egg replacer mixed with 2 T warm water
- ¼ cup molasses
- 2 teaspoons baking soda
- ½ teaspoon salt
- 1 teaspoon cinnamon
- ¾ teaspoon cloves
- ¾ teaspoon ginger
- 2 cups flour
- up to 2 T water added at the end as needed to make a pliable less crumbly dough
Frosting
- 3 cups powdered sugar (about 12-14 ounces)
- 1/3 cups Earth Balance buttery sticks
- 1 ½ teaspoons vanilla extract
- 2-3 Tablespoons non dairy milk
Instructions
For the Cookies:
- Mix thoroughly sugar, shortening, egg replacer, and molasses.
- Sift flour, soda, spices, and salt.
- Mix all together. Add water if necessary.
- Refrigerate dough for a half hour, until firm.
- Sprinkle flour on a clean surface and roll dough with a rolling pin (dusted with flour) and cut out designs (place unused dough in refrigerator while working with the other dough). Alternately, form into balls the size of walnuts.
- Place on parchment lined cookie sheet and bake at 350° for 8-10 minutes.
- Allow to cool on a cooling rack until completely cool.
For the Frosting:
- Cream butter in mixer.
- Add powdered sugar and begin to mix, scraping down the sides.
- Add vanilla and mix.
- Add milk 1 T at a time until frosting is desired consistency (this is a stiffer butter cream like frosting, not a glaze). Add food coloring if desired.
- Spread onto cookies and sprinkle. Enjoy!
