Spice Cookie Granola

- 1/2 cup maple syrup
- 2 Tablespoons molasses
- 1/2 teaspoon ginger
- 1/2 teaspoon cloves
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 Tablespoon coconut oil optional
- 4 cups rolled oats use gf if necessary
- 1 cup shredded coconut unsweetened
- 1 cup dried cranberries roughly chopped
Preheat your oven to 325°. Line a large jelly roll pan with parchment paper and set aside.
Mix up the maple syrup, molasses, spices, and optional coconut oil.
Put oats and coconut in a large mixing bowl.
Pour the syrup sauce over the oat mixture and stir until coated.
Spread the oat mixture onto the prepared pan.
Bake for 30 minutes, stirring every 10 minutes or so, so that the edges don't get too brown.
Allow to cool. Granola will crisp up as it cools.
Mix in dried cranberries.
Serve and enjoy!
