Spice Cookie Granola

  • 1/2 cup maple syrup
  • 2 Tablespoons molasses
  • 1/2 teaspoon ginger
  • 1/2 teaspoon cloves
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 Tablespoon coconut oil optional
  • 4 cups rolled oats use gf if necessary
  • 1 cup shredded coconut unsweetened
  • 1 cup dried cranberries roughly chopped


  • Preheat your oven to 325°. Line a large jelly roll pan with parchment paper and set aside.
  • Mix up the maple syrup, molasses, spices, and optional coconut oil.
  • Put oats and coconut in a large mixing bowl.
  • Pour the syrup sauce over the oat mixture and stir until coated.
  • Spread the oat mixture onto the prepared pan.
  • Bake for 30 minutes, stirring every 10 minutes or so, so that the edges don't get too brown.
  • Allow to cool. Granola will crisp up as it cools.
  • Mix in dried cranberries.
  • Serve and enjoy!
