  • 1 cup white flour
  • 3/4 cup whole wheat flour
  • 1/2 cup wheat germ (you can find this in the refrigerator of the healthy foods department of your grocery store)
  • 1/3 cup packed brown sugar
  • 1 1/2 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • combination of 6 Tablespoons Earth Balance butter and 4 Tablespoons Earth Balance shortening—OR—10 T Earth Balance butter
  • 2 Tablespoons maple syrup
  • 2 Tablespoons ice water
  • sugar to sprinkle optional

  • In a food processor, combine flours, wheat germ, sugar, cinnamon, baking powder, baking soda and salt. Pulse the mixture until all ingredients are combined. Add in the butter, shortening, and maple syrup and pulse until it resembles a coarse meal. Add the water and pulse until the dough barely comes together. Shape dough into a flat disk and wrap with plastic wrap. Put in the fridge for 10-15 minutes.
  • Preheat oven to 350. Line baking sheet with parchment paper and set aside.
  • Place the dough on a lightly floured surface and roll out to 1/8 inch thick. Using cookie cutters you can cut out shapes and place about an inch apart on the baking sheet (they don't spread much). Bake for 15 minutes or until the edges are lightly brown. To make them more of a treat, you can sprinkle a bit of sugar or sprinkles on top before baking.
