Pumpkin Patch Chocolate Bark

  • 1 bag vegan chocolate chips I like Enjoy Life
  • 2 teaspoons coconut oil
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 bag of pumpkin spice vegan marshmallows I like Dandies brand, feel free to use vanilla flavor as well
  • pumpkin seeds
  • dried fruit orange in color, cut into small pieces


  • Place the chocolate chips and coconut oil in a microwave safe bowl.
  • Microwave in 30 second increments, stirring between, until melted.
  • Add cinnamon and vanilla and mix well.
  • Pour chocolate mixture onto a parchment lined baking sheet. Spread evenly, about 1/4 inch thick.
  • Working quickly, sprinkle toppings onto the melted chocolate and press gently to stick.
  • Place in freezer for 20 minutes, or until chocolate is set.
  • Working quickly, use a fork to break up the chocolate into bite size pieces (don't use your fingers or it will melt).
  • Store in freezer or enjoy right away!
