Salted Caramel Granola

This Salted Caramel Granola is dessert for breakfast!  Sweet caramel sauce, crunchy oats, and soft chewy dates—it's my favorite way to start the day!

Ingredients

  • 1 Tablespoon batch homemade Salted Caramel Sauce
  • 4 cups rolled oats (certified gluten free if necessary)
  • 1 c shredded coconut
  • 1 c dates (medjool or deglet noor are both fine, medjool are stickier and sweeter)
  • 1 T coconut flour (or you could use 1 T ground up oats)

Instructions

  • Mix up your Salted Caramel Sauce according to the recipe.  
  • Preheat your oven to 325*.  Line a large jelly roll pan with parchment paper and set aside.
  • Measure 4 cups of rolled oats and 1 cup of shredded coconut into a large bowl.  Pour the caramel sauce over top and mix well.   Spread the oats and coconut onto the lined pan.  Bake in the oven for 30 minutes, stirring every 10 minutes to make sure it bakes evenly.
  • In the meantime, pit and dice your dates into small 1/4 inch pieces.  Sprinkle 1 T of coconut flour over them and mix well, coating the dates so that they won't be sticky.  Pour into a strainer and shake off the excess flour.
  • Once the granola is baked remove from the oven.  It may still be a little sticky, but as it cools it will dry.  Add the dates and mix well.  Allow to cool completely and then store in an air tight container.  It will keep longer than it will last in your house—promise!  You'll eat this quickly!
