Latin Inspired Cabbage Slaw

This Latin inspired Cabbage Slaw is our family's go to side dish for Taco Tuesday, enchilada nights....any time we need a quick and fresh side dish!  With just 6 basic ingredients it comes together in minutes!!!

  • 1 small to medium green cabbage
  • 1 carrot, peeled and ends trimmed
  • 1/2 cup cilantro (one large handful)
  • 2 limes, juiced
  • 1 Tablespoon olive oil
  • 1-2 teaspoons salt (adjust to taste)


  • Using the mandolin attachment on your food processor, shred the cabbage.  You will want about 10 cups of shredded cabbage.  Transfer the cabbage to a large bowl and set aside.
  • Switch to the grater attachment on your food processor.  Shred 1 peeled carrot and add to the cabbage.
  • Roughly chop the cilantro and add it to the vegetables.
  • Juice the limes right over the cabbage mix.  Depending on how much cabbage you have you may need only 1 lime.  You can mix and taste as you go.  
  • Add the olive oil and salt, again adjusting to taste.  Mix well.  
  • Serve alongside your favorite Latin inspired main dishes!  Enjoy!
