Avocado Summer Salad

Ingredients

Salad ingredients

  • mixed greens
  • 1 shallot sliced
  • 1 cup frozen peas
  • 1/2 cup macadamia nuts toasted
  • avocado diced (about a ¼ per person)
  • strawberries about 3 per person

Lime Dijon Salad Dressing

  • Juice of 1 lime
  • 1 teaspoon Dijon mustard
  • 2 teaspoon maple syrup
  • 1 clove garlic, minced
  • ½ teaspoon onion powder
  • salt and pepper

Instructions

  • Whisk all salad dressing ingredients together. 
  • Add avocado to dressing and beat it up a bit, but not so much that the chunks of avocado disappear.
  • Build salad on top of dressing and avocado.  Toss well and serve immediately.
