BBQ Chik'n Pizza:
- tortilla I use 10" flour tortillas, but you could use any size or type
- BBQ sauce
- 2 fully cooked chik'n nuggets diced (I like Gardein and Whole Foods 365 brands, I just bake a few extras to have ready)
- shallots thinly sliced
- frozen corn
- cilantro chopped
- shredded non dairy cheese
Thai Veggie Pizza (our favorite local pizza place has this flavor and we LOVE it):
- tortilla I use 10" flour tortillas, but you could use any size or type
- Peanut sauce any kind that you have will work (substitute sun butter or Wow Butter if you need to keep it peanut free)
- shredded carrots
- shallots
- broccoli cooked and chopped
- cilantro chopped
- shredded non dairy cheese
Classic Cheese Pizza:
- tortilla I use 10" flour tortillas, but you could use any size or type
- Marinara sauce just save a little next time you have spaghetti
- shredded non dairy cheese
Wine & Cheese Night:
- tortilla I use 10" flour tortillas, but you could use any size or type
- Fig jam
- sliced pears or apples
- Follow Your Heart Smoked Gouda cut into small pieces
- shredded non dairy cheese
Basic Method:
Preheat the broiler of your oven.
Place cast iron skillet on stovetop and turn on heat to medium high—a 6 or 7 out of 10. As it starts preheating place your tortilla in the pan. Working carefully, spread the sauce on the already cooking tortilla. Add the toppings you want, then top with cheese. At the 2 minute mark from when you put the tortilla in the pan check the bottom of the tortilla. It should be just starting to brown. Turn off the heat on the stove and transfer the cast iron pan straight into the oven. Watching very carefully, allow the pizza to cook an additional 1 - 1 1/2 minutes under the broiler. The cheese will start bubbling and the tortilla will brown. Let it cook until the cheese has melted, but remove at the very first sign of burning!
Carefully transfer pizza onto a cutting board to cool—I use a large spatula for this. The pizza will be crisp so it should transfer easily. Allow to cool for a minute before cutting to help keep the cheese from sliding off.
Repeat the process for additional pizzas. Each one should take about 3 1/2 minutes total—they're just that easy! Serve as soon as they're sliced—I find that at least Daiya tastes best freshly melted.
