Chocolate Chip Cookie Overnight Oats

Ingredients

  • 2 Tablespoons almond butter (or peanut butter, or sunbutter to keep it nut free)
  • 2 Tablespoons brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract (omit if nut free)
  • 1/2 teaspoon ground cinnamon
  • 2 cups non dairy milk (we like oat milk)
  • 2 cups rolled oats (choose gluten free if necessary)
  • 1/4 cup hemp hearts (optional)
  • 1/4 cup mini chocolate chips (choose dairy free)

Instructions

  • Melt the almond butter in the microwave for 30 seconds to make it soft enough to work with. (I like doing this in a 4 cup mason jar so I can use only one container!)
  • Add brown sugar, vanilla extract, almond extract, and cinnamon and mix together.
  • Slowly whisk in the milk. It will not incorporate fully, but little chunks are ok! They just add bites of flavor!
  • Add the oats, hemp hearts, and chocolate chips to the milk mixture. Stir together to fully incorporate.
  • Refrigerate overnight. The oats will absorb all of the liquid, and it will have a thick pudding consistency. If they are too dry for your liking, add a splash of milk!
  • Serve and enjoy! My kids like these with fresh fruit on top! Store leftovers in the fridge for up to 3+ days (they don't last more than a day or two in my house!).
