Latin Inspired Cabbage Slaw
This Latin inspired Cabbage Slaw is our family's go to side dish for Taco Tuesday, enchilada nights....any time we need a quick and fresh side dish! With just 6 basic ingredients it comes together in minutes!!!

- 1 small to medium green cabbage
- 1 carrot, peeled and ends trimmed
- 1/2 cup cilantro (one large handful)
- 2 limes, juiced
- 1 Tablespoon olive oil
- 1-2 teaspoons salt (adjust to taste)
Using the mandolin attachment on your food processor, shred the cabbage. You will want about 10 cups of shredded cabbage. Transfer the cabbage to a large bowl and set aside.
Switch to the grater attachment on your food processor. Shred 1 peeled carrot and add to the cabbage.
Roughly chop the cilantro and add it to the vegetables.
Juice the limes right over the cabbage mix. Depending on how much cabbage you have you may need only 1 lime. You can mix and taste as you go.
Add the olive oil and salt, again adjusting to taste. Mix well.
Serve alongside your favorite Latin inspired main dishes! Enjoy!
