Peel and dice sweet potatoes and place them on a large jelly roll pan lined with parchment paper. Add the remaining ingredients, except for the cilantro, onto the pan—no need to premix. Using your hands, toss the sweet potatoes around to coat them with the dressing ingredients.
Place the pan in the oven and roast for 45 minutes at 375°, or until fork tender. Remove from the oven and serve!
