Pumpkin Vinaigrette

This yummy pumpkin vinaigrette is the perfect touch to take your holiday meal over the top.  Sweet, tangy, and festive, it's sure to be a hit with all your dinner guests!

Ingredients

For the Dressing:

  • 1/4 cup pumpkin puree here's how to make your own!
  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 2 Tablespoons orange juice
  • 1 Tablespoon maple syrup
  • 1 clove garlic, minced
  • salt and pepper to taste (about ½ teaspoon salt)

Salad Ideas:

  • greens of your choice
  • pears
  • orange slices (I love the convenience of canned oranges in salads)
  • grapes
  • shallots, sliced
  • roasted pumpkin seeds

Instructions

  • Place all ingredients into a container with a lid. Shake vigorously until completely blended.
  • Serve over the greens of your choice, and top with pears, oranges, grapes, shallots, and pumpkin seeds.

Notes

This recipe makes enough for several salads—I keep it in the fridge for a few days.
