- 3 mangoes about 2 cups diced, (I use the small yellow "champagne" variety)
- 2 limes juiced
- 1 shallot diced (about 1/2 cup of shallot)
- 2 cloves garlic minced
- 1 small handful of cilantro chopped
- 1/2 teaspoon salt (optional, to taste)
Begin by dicing your shallot and mincing your garlic. Place in a bowl. Squeeze the lime juice over them, and give it a stir. Set aside.
While the shallot is marinating, prep your mangoes. Using a small paring knife, work from the stem to the bottom, peeling the skin in long pieces. Once the entire mango is peeled, slice "slabs" of mango from stem to bottom. Lay those large pieces flat on your cutting board and dice into small pieces, about 1/4" - 1/2" in size. Work carefully—ripe mangoes are very slippery.
Add the mangoes to the shallot mixture. Add the chopped cilantro. Give it a good stir. Serve and enjoy!
