Chickpea Stir Fry with Pineapples

For the Stir Fry
- 2 15 ounce cans chickpeas, drained
- 1 pound frozen pineapple chunks (alternately, use a can of pineapple chunks)
- 1 10 ounce bottle stir fry sauce (I like teriyaki, sweet and sour, Asian BBQ, sweet chili)
Optional Mix Ins
- rice
- frozen peas
- sliced green onions
- chopped almonds or peanuts
- mushrooms
- bell peppers
- diced onions
Placed the drained chickpeas in a dry skillet over medium heat.
Add the frozen (or canned) pineapple)
Pour about half of the bottle of sauce overtop of the chickpeas and pineapple, and begin to mix well.
Bring the sauce up to a bit of a bubble, adding more sauce as needed to coat.
Let simmer for about 5 minutes, tossing with a spoon as needed.
Remove from heat.
Garnish with green onions and almonds. Serve over rice.
