Equipment
Instant Pot
Ingredients
2cupssushi rice(see notes)
2cupswater
1teaspoonsalt
Instructions
Place the rice, water, and salt in the liner of your Instant Pot. Stir together (I like to make sure the rice is fully covered by the water.).
Close the lid of your Instant Pot and set to sealing.
Set your Instant Pot to manual/high pressure for 5 minutes (it will take about 10 minutes to come to pressure, 5 minutes to "cook," and 10 minutes to naturally release pressure).
Once the Instant Pot has naturally released pressure for 10 minutes you can turn the valve to open to release any remaining steam.
Once the pin drops open the Instant Pot. The rice will be quite compact due to the nature of pressure cooking. Simply fluff it up with a spoon and it's ready to serve!
Notes
This recipe has been tested specifically with sushi rice. I have not experimented (yet!) with other short grain rices like arborio, so substitute at your own "risk."For directions on how to cook other types of rice, please see:Instant Pot Basmati RiceHow to Cook Long Grain Rice in the Instant Pot
