Vegan Cabbage Fried Rice
With just 7 ingredients, this easy vegan Cabbage Fried Rice is a perfect weeknight meal! Mix and match with whatever veggies you have on hand for the perfect take out dish at home!

- 1 Tablespoon vegetable oil (I use avocado oil)
- 1 large white onion, sliced into half moons (you can use yellow or red onion if that's what you have!)
- 4 cups finely sliced green cabbage (about a quarter of a large head of cabbage, you can use purple as well, though the color may make your whole dish purple)
- 2 cups dry rice, prepared according to package directions (see notes for link to cook in Instant Pot)
- 1/4 cup soy sauce (use gluten free tamari if needed)
- 1 Tablespoon sesame oil
- 1 pound frozen veggie mix, cooked according to package direction (I cook in the microwave)
- sliced green onions for garnish, optional
- 1 block air fried tofu (see notes for link)
Prepare the rice, tofu, and frozen veggies before starting to make the fried rice. It's important to have all of the ingredients ready so that you can cook quickly. Slice the cabbage and onions and set aside.
Heat your wok over medium high heat (you can use a very large skillet if you don't have a wok).
Place oil in your wok.
Add the onion and cook for 2-3 minutes to get it started.
Add the cabbage and cook for 3 minutes more.
Add the cooked rice and mix.
Add the soy sauce and sesame oil and mix well to incorporate fully.
Add the cooked frozen veggies and tofu.
Mix well to evenly distribute all ingredients.
Garnish with sliced green onions if desired. Serve and enjoy!
