Whew—time to get back to posting. My phone died the other night and for some reason that sent me into a complete technology downfall! 72 hours with no phone, no instagram, no time telling device—its amazing how many features are wrapped up into one little gadget! Thankfully Irving got me back up and running tonight, and apparently my blogging mojo is back too! So without further ado, here’s my new seasonal favorite smoothie!
The other morning I had a little bit of leftover pumpkin puree and was in the mood for a smoothie. We’ve now had said smoothie at least 3 times in the past week, maybe 4? So good. For some reason David has been anti smoothie for about 6 months now, but when I made this one he got so excited and gobbled this one down! I think it tastes almost like a pumpkin pie—it could totally pass for dessert—but it is so simple, no added sugar, and perfect for early mornings.
Pumpkin Smoothie, makes about 16-20 ounces
2 dates, pitted
½ c pumpkin puree (even better if it’s frozen!)
½ frozen banana
dash of cinnamon
3/4 c – 1 c almond milk, depending on how thick or thin you like your smoothie!
Put all ingredients into a blender and blend until smooth. Enjoy right away!
