Mediterranean Seven Layer Dip
January is the month where everyone starts off healthy, searching for green smoothies and gluten/dairy/meat-free everything, and then quickly devolves into Super Bowl Madness, full of greasy snacks and appetizers. What if I told you that you could have the best of both worlds? Healthy AND snacky! A few weeks ago I shared my recipe for Baked Tofu Feta with my local vegan Facebook group. A woman (Hi Julie!) mentioned that it would be perfect in her Mediterranean Seven Layer Dip. Wait, what?!? I was intrigued and pushed for details. She gave me the quick run down of how she made the traditional party dip, but with Mediterranean flavors. Done. I had just the plan!
I’ve mentioned once or twice before that I am in love with hummus (Firmly planted in “Team #hummusisafoodgroup” —who’s with me?), and that I’ve got a secret ingredient that makes mine the “very best!” And my Baked Tofu Feta is so delicious, and super easy to make. Combining the two is a no brainer. Layer it up with a few veggies and you’ve got yourself a yummy seven layer dip!
I added a simple Tahini Garlic Sauce to drizzle on top. I make this sauce often, and drizzle it over veggies, a big “bowl” meal, on sandwiches—it really works in all kinds of applications, and is especially delicious in this dip!
Let’s take this dip one step further. I love big pot lucks and parties, but let’s face it—sharing food with lots of people brings out my inner germaphobe (if Irving is reading this I’m sure he’s laughing because I’m really an outer germaphobe—this is not a secret!). Especially when it comes to dips, I’d rather not share with a whole house full of people if I can avoid it. Instead I made these super cute individual dip jars! Everyone gets their own Mediterranean Seven Layer Dip—no sharing required! PLUS they look fun, and are really easy to transport! Win!

Whether you are going to a big Super Bowl party with friends next month, or just hosting a fun Moms’ Night, these little Mediterranean Seven Layer Dip jars will be a hit! My kids LOVED them—seriously, both boys ditched the chips and just dug in with a spoon. They ate all of the ones that I photographed, and then ate more the next day when I shot the video). Mediterranean Seven Layer Dip
Ingredients
For the Tahini Garlic Sauce
- 1/2 cup tahini
- juice of 1 lemon
- 1/2 cup water
- 1/4 cup olive oil
- 3 cloves garlic
- 1 teaspoon salt
- 1/2 teaspoon thyme
- 1/2 teaspoon cumin
For the Layers
- 1 batch My Favorite Hummus or use store-bought, see notes
- 1 batch Baked Tofu Feta see notes
- tomatoes seeded and diced
- cucumbers seeded and diced
- kalamata olives sliced
- green onions sliced (or use minced shallot)
- tahini garlic sauce see above
- parsley to garnish chopped fine
- chips for serving pita chips or tortilla chips work well
Instructions
To make the Tahini Garlic Sauce:
- Put all Tahini Garlic Sauce ingredients in a blender and blend until completely combined.
For the Layers:
- Start with a base of hummus. I filled each jar about 1/3 of the way full with hummus, maybe 1/4 cup of hummus)
- Add the other layer ingredients one at a time. Spread them out to the outside edge of the jar so you can see the layers through the glass.
- Place about 1/4 cup of the tahini garlic sauce in a small plastic bag. Snip the corner off with a pair of scissors and use it as a piping bag, squeezing a drizzle of tahini garlic sauce over the top of each jar.
- Garnish with a sprinkle of parsley and serve with chips for dipping.
- (If not serving right away, cover with the lid and store in the refrigerator. These are best relatively fresh, but can sit in the fridge for the day if need be.)
