One of our favorite go to meals is a TLT—Tempeh, Lettuce, and Tomato Sandwich. They are delicious, quick to make and easy to customize for each person. This is not a recipe by any means, but I’ll share a few of our favorite ingredients.
Tempeh: Tempeh is made from fermented soy beans, and often mixed with grains to make a firm patty, similar to a veggie burger. My favorite brand is Turtle Brand Tempeh. There are different varieties, including some that are pre-sliced and marinated like the ones I use for my TLT’s. I grill the strips in a skillet with a tiny bit of oil. It takes about a minute per side.
Veganaise: I should let you know that this is an ingredient that Irving and David like. I stopped using mayonnaise 20 some years ago to save calories, and I think I’ve lost my taste for it. However, for anyone who loves mayonnaise, this is a great vegan version! Tastes just like the real thing. I mix it with mustard for David to use as a “sauce.” He gets very excited about sauce!
Dave’s Killer Bread: Have you tried this brand? Delicious and full of whole grains…but not tough and crunchy like some whole grain breads! We get a two loaf package at Costco and freeze one right away. It thaws perfectly and that way it lasts longer. I store the loaf we are currently using in the refrigerator to extend its shelf life as well.
Ok…so back to the sandwich! Choose your spreads, pile on your ingredients, and top with a second slice of bread. Today we used tomato, greens, sprouts, veganaise and stone ground mustard, sesame garlic tempeh., and we toasted our bread. I think avocado slices and cucumbers would be tasty too! Enjoy!
TLT Sandwich with blue corn chips and slices of green pluots…a variety of a cross between a plum and an apricot. I apologize for the poor picture quality…it was super sunny out today (!) and by the time I realized my pictures were overexposed we had eaten every last bit of our sandwiches! You get the idea though 🙂
