Fried Dandelions

Five years ago, as a new vegan growing accustomed to hearing “wait, you’re vegan, what do you even eat?”, I decided to start Fried Dandelions.  (My very first post is here.  Don’t look.  Ok, fine, look, but be nice-ha!)  I loved to cook, and share food with friends, so writing down my recipe creations seemed like a logical next step.  I’m pretty sure that my mom was my only reader for the first while, but I kept on plugging along, sharing nightly dinners, vegan restaurant finds, and ideas on feeding kiddos.  Fast forward 5 years and I now have nearly 15,000 followers across social media.  Thank you for sharing my recipes, it means the world to me.  I am amazed, humbled, and excited to see how my blog has grown, and can’t wait to see where it goes in the future.  I have big goals of teaching cooking classes, traveling cooking birthday parties, and someday writing my own Fried Dandelions cookbook.  In the meantime, I’ll continue doing what I love most—sharing my recipes and interacting with my wonderful readers turned friends.  Thank you for all of your support over the past five years—I truly could not do this without all of you to share with!

#5 Hippie Breakfast Bowl

This delicious spin on chia pudding is the ultimate breakfast for those short on time in the morning!  Simply pop the ingredients in a jar the night before and let the chia seeds work their magic while you sleep.  When you wake up in the morning breakfast will be served!

#4 Coconut Tapioca Pudding

This is Irving’s favorite dessert!  Tapioca Pudding goes vegan with a simple swap of delicious coconut milk.  Don’t miss the chocolate version!

#3 Pizza Tofu

Kid favorite right here!  Simple tofu takes on all of the delicious flavors of a slice of pizza in this fun recipe twist on nuggets.  Bonus—they’re gluten free!  Want the whole pie?  Be sure to check out my Pizza Crust recipe!

#2 Instant Pot Black Beans

Boy oh boy do you all love your Instant Pots!  This is the newest recipe on this list, and is quickly pushing it’s way to my #1 viewed recipe of all time.  Almost!  There’s something about putting dried black beans in your Instant Pot and seeing them come out fully cooked in 22 minutes that’s pure magic!

#1 Perfect Brownies

This is one of the recipes I am most proud of!  After rounds and rounds of testing I finally perfected my brownies with the help of aquafaba!  These brownies are the real deal, complete with crackle top.  Don’t miss the gluten free version!
