If you’re feeling like you need something a bit lighter after yesterday’s Pan Dulce, you are in luck! I present to you Apple Pie in a glass—for breakfast! This comes together in minutes (aren’t smoothies awesome) and it is full of good-for-you ingredients! We picked up some fresh apple cider last weekend and I thought this would be a fun way to enjoy some of it. The oatmeal blends right in and gives it a hidden “pie crust” flavor, and the banana gives the smoothie a nice, creamy consistency. You probably have most/all of the ingredients already, so what are you waiting for?
Apple Pie Smoothie, serves 1-2
1 banana
1 apple (I peeled mine because I needed it to go through a sippy cup, but you could leave the peel to add more good-for-you fiber)
½ c apple cider (apple juice would work, but with a milder flavor)
1 c almond milk
½ cup rolled oats
¼ tsp cinnamon
dash of ground ginger
handful of ice cubes
Put all ingredients into a blender and let it whirl. Pour into serving glass, add a small dash of cinnamon to make it look fancy, and enjoy!
