Apple Peanut Butter Sandwiches

From the looks of facebook, every person I know went back to school this morning.  Everyone, that is, except for David and I.  We are still in denial that it is summer, even though the calendar clearly says September.  We decided to go with the flow and have ourselves a back-to-school lunch today.  I saw this idea a few weeks back on Whole Food’s facebook page and made a mental note to try it.  We picked up a few Pink Lady Apples (one of my favorite varieties-sweet, tart, and crispy) at the store this morning…I’m so excited that it is apple season!

Thinly sliced apples (but not to thin) replace the bread in this take on the classic peanut butter sandwich.  Slice from two opposite sides of the apple creating large, thin discs of apple.  Spread 1 slice of apple liberally with peanut butter (or any other nut butter).  We sprinkled ours with cinnamon sugar, but granola or even chocolate chips would be great!  Top with second slice of apple.  If you are going to pack these in a lunch brush a little bit of lemon juice on the apple slices to keep them from browning.

These were a great meal for David, as bread tends to be a bit too thick for him.  He usually opens up his sandwiches and licks the filling out.  We munched on the extra apple pieces, but if you didn’t need them right away they could be frozen and used in apple sauce later on this fall.
