I made a parmesan like topping for some pasta a couple of weeks ago, and ever since then, David and I have put it on top of everything! I think it deserves a post of it’s own. Nutritional yeast, toasted walnuts, panko bread crumbs and salt make a savory topping that mimics the taste of parmesan cheese without any weird artificial ingredients! When I told David it was parmesan, he asked “Carma John?” Sure! It’s not really parmesan, so it might as well have it’s own fun name!
Make up a batch of this to use on pasta, salads, pizzas—you name it! This keeps in the fridge for a few weeks—if you don’t eat it first!
“Carma John”—Vegan Parmesan Sprinkles?
1 c walnuts, toasted
¼ c nutritional yeast
¼ c panko bread crumbs
?½ t salt (or to taste)
Put walnuts, nutritional yeast, and salt into the food processor and pulse until small and crumbly. Add the panko bread crumbs and pulse a few more times—this will help to break it up a bit.
