Oven Roasted Salsa

Ingredients
  • 6 medium tomatoes
  • 1-2 jalapenos
  • 1 onion
  • 1 head of garlic
  • juice of 3 limes
  • 2 tsp salt
  • 1 c packed cilantro
Instructions
  1. Slice tomatoes in half and remove any core. Peel onion and quarter, removing top and bottom. Slice jalapeno in half, removing stem and removing seeds and veins if you like a more mild salsa. Place all ingredients on a pan covered with parchment paper. Drizzle with olive oil. Slice off top of garlic head and put on a small square of foil. Drizzle with olive oil and wrap foil around garlic, leaving it loose at the top. Place on pan with other ingredients.
  2. Roast for 30 minutes, until vegetables are soft.
  3. Put in food processor with lime juice, salt, and cilantro. Process until it reaches desired consistency.
