Ingredients
- 6 medium tomatoes
- 1-2 jalapenos
- 1 onion
- 1 head of garlic
- juice of 3 limes
- 2 tsp salt
- 1 c packed cilantro
Instructions
- Slice tomatoes in half and remove any core. Peel onion and quarter, removing top and bottom. Slice jalapeno in half, removing stem and removing seeds and veins if you like a more mild salsa. Place all ingredients on a pan covered with parchment paper. Drizzle with olive oil. Slice off top of garlic head and put on a small square of foil. Drizzle with olive oil and wrap foil around garlic, leaving it loose at the top. Place on pan with other ingredients.
- Roast for 30 minutes, until vegetables are soft.
- Put in food processor with lime juice, salt, and cilantro. Process until it reaches desired consistency.
