This easy two ingredient date caramel sauce is sure to be a new favorite!  In just 5 minutes you’ll have a lucious, but healthy sauce to drizzle over brownies, ice cream, or even apple slices!

When I first thought about writing this post I thought I’d focus on the busy back to school season, and the desire for simple recipes using few ingredients.  But as I got to thinking I realized that there really isn’t a time all year that I don’t want easy recipes.  Back to school?  Check.  Busy holiday season?  Check.  Hot summer evenings?  Check.  Simple recipes are always a good thing, even for the biggest home cooks!  The Two Ingredient Date Caramel Sauce recipe I’m sharing with you today comes from the new cookbook 5-Ingredient Vegan, by Nava Atlas.  It’s full of gorgeous simple recipes using—you guessed it—5 ingredients or less.  Recipes use lots of help from the grocery store, like sauces and broths, to get dinners (and snacks and breakfasts and everything in between) on the table in a flash!  It’s a cookbook everyone needs to have in their back pocket!

5-Ingredient Vegan

5 Ingredient Vegan is a gorgeous cookbook!  The photos are so inviting, and the layout is really clean and simple.  It’s divided into chapters, covering appetizers, soups, salads, vegan proteins, pasta, grains & beans, veggies, wraps, and even sweets!  There’s something in here for everyone.  Nava also gives some tips and encouragement on how to eat vegan.  I’ve got so many pages dog-eared with recipes I can’t wait to try, like scallion pancakes with sweet and savory dipping sauce, lemon pepper tofu cutlets, and streamlined vegetable lo mein!

Two Ingredient Date Caramel Sauce

Dates, especially of the medjool variety, are known for tasting a bit like caramel.  Nature’s candy!  They ar soft, ooey gooey, and sweet.  I love to use them to sweeten dishes naturally, like granola, ice cream, and lattes.  I’ve even filled them with tahini for a treat that tastes just like a candy bar!  If you blend dates with a bit of plant milk they turn into a caramel like sauce that is delicious!  Perfect for dipping apple slices, drizzling over ice cream, or even brownies!  And with just two ingredients it doesn’t get any simpler!

Two Ingredient Date Caramel Sauce

The traditional recipe for caramel sauce consists of a cup of sugar, half a cup of butter, and some milk or cream. This amazing sauce, with an almost uncanny resemblance to caramel, is almost the opposite in terms of sugar and fat. Yet, it tastes just as good, and unlike regular caramel sauce, there’s no cooking involved. An incredible dip for sliced apples and/or pears, this is also a lovely topping for vegan cakes and ice cream.

Ingredients

  • 1 cup pitted dates (medjool preferred, but deglet are ok)
  • 2/3 cup vanilla unsweetened plant milk (or more as needed)

Instructions

  • Soak the dates in hot water to cover for 30 to 60 minutes, then drain well.
  • Combine in a blender with the nondairy milk and blend until very smooth.
  • If the sauce is too thick to pour out of the blender, add just a touch more nondairy milk and blend again. On the other hand, if the sauce seems thin (it should have body, though it won’t be as dense or sticky as sugar-based caramel sauce), add a couple more soaked dates.
  • Pour into a serving container and serve over non-dairy ice cream, vegan brownies, or as a dip with fruit.

Notes

Optional Addition

Add a pinch or grinding of salt to take it up a subtle flavor notch. (Fried Dandelions note: I strongly recommend this!!! Yum!)

    So delicious! My kids loved it too! We call it caramel apple dip. I added the salt and I thought it was perfect. So healthy and so easy!
