Peppermint Marshmallow Sugar Cookies—they’re what Christmas dreams are made of!
I’m so excited to team up with Immaculate Baking again! You might remember my Pumpkin Spice Waffles that I shared earlier this fall. I’m back with more Immaculate goodies and COOKIES! Last week my dear friend “Mrs. Lisa” from church asked me if I would mind making a plate of cookies to share on the allergy friendly cookie table at the church’s Christmas carol sing along. Yes, please! They were hoping for a few plates of nut free cookies, but dairy free and gluten free were a bonus option. When I found Immaculate Baking’s gluten free sugar cookie mix it was a no brainer—I was going to transform them into Christmas magic!

Every year our church has an evening of singing Christmas carols, drinking hot chocolate, and sharing cookies. It’s a beautiful, peaceful night + my children. What’s that? My children aren’t calm and peaceful? Yeah, not even when they’re asleep. But Mrs. Lisa, our wonderful Early Childhood Director, comes and takes them by the hand and walks them around the entire church, showing them the decorated trees, bringing them up front to see the instruments, and helps them to enjoy the music as children do best! I’m always on the edge of my seat, ready to grab them and run, but I really love going. Seeing the excitement of Christmas through the eyes of your children is magical—even when it’s a bit chaotic!
For these yummy Peppermint Marshmallow Sugar Cookies I added not one, but two fun Christmas mix ins—crushed candy canes AND marshmallows. Yeah, my boys are pretty happy about that. The marshmallows get pretty melty in the oven and tend to be a little bit messy, so if you’re wanting to simplify you can always add in white or dark chocolate chips, or just skip them and go for the candy cane. David and I went all out and our cookies turned out really yummy!

Peppermint Marshmallow Sugar Cookies
Ingredients
- 1/2 cup vegan butter (I use Earth Balance)
- 1 package Immaculate Baking gluten free sugar cookie mix
- 3 Tablespoons aquafaba (liquid reserved from a can of beans)
- 1/2 cup mini marshmallows (I like Trader Joe's and Dandies brands)
- 1/2 cup crushed candy canes (I pulse them in the food processor until they are small crumbs—be forewarned, it's loud! (I like Trujoy brand, or just regular starlight mints—Trader Joe's has some good ones)
- 1/2 teaspoon peppermint extract
- 1 teaspoon vanilla extract
Instructions
- Place butter in your stand mixer and beat until slightly creamed.
- Add aquafaba, peppermint extract, and vanilla. Beat again until slightly incorporated.
- Add package of sugar cookie mix to wet ingredients and mix until incorporated.
- Add candy cane bits and marshmallows and mix until incorporated.
- Scoop cookie dough into small balls, maybe the size of two teaspoons? Place them on a baking tray lined with parchment with plenty of room. I had 12 cookies on a 12 x 18" sheet. Be sure to tuck marshmallows into the cookies, as if they wiggle loose they melt!
- Place the tray into the freezer for about 30 minutes, allowing the cookies to firm up completely.
- Bake trays of cookies in a 350 degree oven for 12-13 minutes, until slightly golden.
- Allow to cool slightly on the tray, and then very carefully move them to a cooling rack to cool completely.
